For Fathers day I attempted to recreate it on the grill.  We had a Brazilian lunch.  Since bacon cooks so much faster then turkey I went to a deli and bought already cooked turkey breasts.  I cut them into bight size cubes.  Then, the overly fattening part, I wrapped each piece of turkey with a piece of bacon and put them on the grill.  Oh, I did put brown sugar on each one and stuck them all on a skewer.  They turned out delicious if I may say so myself.  Again, oober fatening so it's not going to be a regular for us.  Put that with some awesome grilled steak, fresh pineapple with a brown sugar glaze grilled and you have our Father's Day dinner.   Mmmmmm!!! The longer fruits and vegetables sit on the shelf the more nutrients it looses.  So next time you are at your local Walmart and their produce looks terrible (which is more common then not it seems) consider getting frozen for that shopping run!&lt;br /&gt;&lt;br /&gt;I made this once, but it was a long time ago.  When peaches are back in season I will be doing it again. I've been making it for a lunch almost everyday this week.&lt;br /&gt;&lt;br /&gt;All you need is:&lt;br /&gt;2 Wheat pitas or 1 wheat tortilla&lt;br /&gt;Chicken, cooked and cut into bite size pieces&lt;br /&gt;1/4 cup Red Onion, finally chopped&lt;br /&gt;2 tbls. BBQ Sauce (I like honey, but original is yummy too)&lt;br /&gt;Rosemary to taste&lt;br /&gt;1/4 cup fat free shredded cheese&lt;br /&gt;&lt;br /&gt;Spread BBQ sauce on your pitas.  Put chicken, onions, and rosemary on.  Top with cheese.  Bake in oven at 400 degrees. Orange Banana Nut Bread</title><content type='html'>So, I thought, just for fun, I would start doing Did You Know Fridays.  Today being the first, did you know that Botanically speaking banana is an herb?  I had no idea but thought it was interesting.&lt;br /&gt;&lt;br /&gt;I can't remember where I got this recipe but it was a fun change to banana nut bread.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold; font-style: italic;"&gt;Orange Banana Nut Bread&lt;/span&gt;&lt;br /&gt;1 1/2 cups sugar&lt;br /&gt;3 tablespoons vegetable oil&lt;br /&gt;2 eggs&lt;br /&gt;1 1/4 cup mashed bananas&lt;br /&gt;3/4 cups orange juice&lt;br /&gt;3 cups flour&lt;br /&gt;1 1/2 teaspoons baking soda&lt;br /&gt;1 1/2 teaspoons baking powder&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1 cup chopped walnuts&lt;br /&gt;&lt;br /&gt;&lt;span&gt;In a mixing bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moistened. Stir in walnuts. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 325 degrees F for 50-60 minutes or until a toothpick inserted near the center comes out clean. Shred chicken with a fork and mix it all together.  Cook 2 more hours, or until it is well mixed and tender.&lt;br /&gt;&lt;br /&gt;Place baked tortilla chips on a plate.  Put 1 cup chicken, 1/4 cup corn, 1/4 cup low sodium black beans, fritos nacho cheese (only 50 calories), and any nacho vegetables you might like. Today I am going to be making some for my in-laws so I thought I should post my two favorite recipes.  I usually cook mine on the grill but today I will be doing the oven (since we have no propane right now).&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Lemon&lt;/span&gt;&lt;br /&gt;Cut the salmon down the middle, not cutting it all the way through, creating a pocket.&lt;br /&gt;Place lemon slices and some garlic pieces inside.&lt;br /&gt;Pepper to taste&lt;br /&gt;Preheat oven to 350&lt;br /&gt;Wrap loosely in tinfoil and place in oven for 8 min. &lt;br /&gt;Check to see if it is done.  If it doesn't flake cook for another 3-5 minutes.&lt;br /&gt;Remove and serve with your favorite lemon butter sauce.&lt;br /&gt;&lt;br /&gt;A1&lt;br /&gt;This is my husbands favorite&lt;br /&gt;Rub garlic salt and onion pepper on both sides to taste.&lt;br /&gt;Rub A1 steak sauce on both sides.&lt;br /&gt;Slice up red onions and place on the salmon.&lt;br /&gt;Cover loosely in foil and place on grill.&lt;br /&gt;Cook for 5 minutes then flip and cook another 5 min. Mix and add chicken.  Coat chicken with the mixture.&lt;br /&gt;&lt;br /&gt;Place wok over high heat.  When hot, a 1 tsp sesame oil, onion, pepper, and garlic.  Cook until vegetables are crisp-tender, 2-4 min.  Put to the side in a bowl&lt;br /&gt;&lt;br /&gt;Return pan to high heat and add another tsp sesame oil and half of the chicken in a single layer.  Cook until no longer pink.  Add the cooked chicken to the bowl of vegetables, and cook remaining chicken.&lt;br /&gt;&lt;br /&gt;Return the vegetables and chicken to the pan to reheat if necessary.  Transfer to a serving bowl and add the sauce.  Mix until well combined. Another New Years resolution I guess will be to be more on top of this blog!  I've been cooking a lot lately, but I have been trying healthier things.  I love to cook, but don't necessarily focus on calories, fat, etc.  So it has become a new challenge for me.  I am enjoying it!   I've been looking into some healthy cook books and found lots of recipes.  I've been combining some to create my own, but I may also be posting other favorites straight from the books. I went to a farmers stand this morning and bought a dozen awesome peaches for only a few dollars.  This was a hit at the party we went to today.  I made 4 pies and they were all eaten.  I had lots of people ask for the recipe so here it is. &lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Peach Cream Pie&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;2 pie crusts (baked and cooled)&lt;br /&gt;4 oz. cream cheese&lt;br /&gt;1/2 cup sugar&lt;br /&gt;1 tsp vanilla&lt;br /&gt;1/2 pint whipping cream&lt;br /&gt;1 cup peeled and pureed peaches (or strawberries)&lt;br /&gt;2-4 peaches peeled and sliced&lt;br /&gt;2/3 cup water&lt;br /&gt;3 tsp corn starch&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;cream-&lt;/span&gt;beat cream cheese until smooth.  Add sugar and vanilla.  Beat whipping cream until fluffy (stiff and a little thick).  Mix cream cheese mixture with whipping cream.  Divide into the two pie crusts and put in fridge for approx. 1-1/2 hours.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;peaches-&lt;/span&gt;Combine pureed peaches and sugar in a pot on the stove.  Combine water and corn starch then add to peaches and sugar.  Bring mixture to a boil and stir until a little thicker.  Cool for 2 hours.&lt;br /&gt;&lt;br /&gt;Place sliced peaches on top of cream and pour the pureed peach mixture over the sliced peaches.  Place in fridge and let cool 1-2 hours. I can't believe how busy it has been lately.  I have found a fantastic recipe to post. I have been in search for Cafe Rio's shredded pork recipe. (All those Utahns out there know what I am talking about)  Well I haven't found it but I think I have come pretty dang close.  Now all I need to do is figure out their red sauce!  Last week we had chicken instead and that was delicious.  We have eaten them in enchiladas and on salads.  Can't go wrong with this one.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Shredded Pork&lt;/span&gt;&lt;br /&gt;2 lb. pork&lt;br /&gt;2 cups brown sugar&lt;br /&gt;1 cup Pace Picante Salsa&lt;br /&gt;&lt;br /&gt;In a crock pot as salsa and brown sugar.  Mix and then put the roast in.  Cook on low for 6-8 hours.  Half way thru flip the roast.  After a few hours break it up into large chunks.  An hour or so before serving shred it into small pieces, stir it all together. So today I tried to recreate it.  It was PERFECT!  Exactly like the restaurant but more for cheaper!  It's got chicken, bacon, lettuce, tomatoes, cheese, and avocados.  Just like a California club sandwich but on pizza.  We made one of honey wheat dough and one on white dough.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic; font-weight: bold;"&gt;California Club Pizza&lt;/span&gt;&lt;br /&gt;Pizza dough &lt;span style="font-style: italic;"&gt;(recipe down below&lt;/span&gt;)&lt;br /&gt;2 cups chopped ice burg lettuce&lt;br /&gt;1 cup chopped romane lettuce&lt;br /&gt;4 tablespoons mayonnaise&lt;br /&gt;1 cup bacon (cooked and crumbled)&lt;br /&gt;2 chicken breasts&lt;br /&gt;1 tomato, diced&lt;br /&gt;1 Avocado, sliced&lt;br /&gt;Olive Oil&lt;br /&gt;Mozzarella cheese&lt;br /&gt;&lt;br /&gt;-Cook bacon as directed, crumble, and set aside.&lt;br /&gt;-Pound chicken until it is thin.  Cook in skillet.  Cut it into small bite size pieces and set aside.&lt;br /&gt;-Cook dough in oven as directed.  Last 3-5 minutes brush dough with olive oil and sprinkle cheese over it.  Let cheese melt and remove from oven.&lt;br /&gt;-Put chicken and bacon on top of cheese.&lt;br /&gt;-In a bowl mix lettuce and mayonnaise.  Stir until the lettuce is well coated.  Place on pizza and spread it out evenly.&lt;br /&gt;- place tomatoes and avocado on top and serve.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic; font-weight: bold;"&gt;Wheat Pizza Dough&lt;/span&gt;&lt;br /&gt;1 package dry yeast&lt;br /&gt;1 1/4 cups lukewarm water&lt;br /&gt;1 1/2 cups whole wheat flour&lt;br /&gt;2 cups all purpose flour&lt;br /&gt;1 tablespoon olive oil&lt;br /&gt;1 tablespoon honey&lt;br /&gt;1 teaspoon salt&lt;br /&gt;&lt;p&gt; -Proof yeast in a measuring cup with lukewarm water.&lt;/p&gt;&lt;p&gt;-In a food processor add whole wheat and all purpose flours, proofed yeast, oil mixed with honey and salt. Pulse processor to combine all ingredients. Then process until the dough forms a ball on the blade. Remove dough to a large oiled bowl. Cover with plastic wrap or a kitchen towel and let rise in a warm place for 45 minutes or until dough has doubled in bulk.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Punch down dough and transfer to a floured board and knead briefly.&lt;/p&gt;&lt;p&gt;On a floured board roll and stretch each piece of dough into a 7 to 8-inch circle. I wasn't expecting anything great at all, but our stir fry was delicious!&lt;br /&gt;&lt;br /&gt;Stir Fry&lt;br /&gt;Spaghetti&lt;br /&gt;1 lb. Sirloin steak cut into bite sizes&lt;br /&gt;1 red pepper&lt;br /&gt;1 white onion&lt;br /&gt;2 cloves garlic minced&lt;br /&gt;1/3 cup Soy sauce&lt;br /&gt;1/3 cup cooking wine&lt;br /&gt;&lt;br /&gt;Cook spaghetti as directed&lt;br /&gt;Cook the meet until medium (or whatever your preference) then put aside.  Put Cooking wine in hot wok.  Add garlic, peppers, and onions.  Cook until soft.  Add steak to the wok to re-heat.  Stir in soy sauce. Part of the Barefoot Bloggers.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Pasta with Sun-Dried Tomatoes&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;&lt;span style="font-style: italic;"&gt;1/2 &lt;/span&gt;&lt;/span&gt;pound spiral pasta&lt;br /&gt;sal&lt;br /&gt;olive oil&lt;br /&gt;1 pound ripe tomatoes, medium diced&lt;br /&gt;3/4 cup black olives diced&lt;br /&gt;6 sun-dried tomatoes in oil, drained and chopped&lt;br /&gt;&lt;br /&gt;For Dressing:&lt;br /&gt;5 sun-dried tomatoes in oil, drained&lt;br /&gt;2 tbls red wine vinegar&lt;br /&gt;6 tbls good olive oil&lt;br /&gt;1 garlic clove, diced&lt;br /&gt;1 tsp capers, drained&lt;br /&gt;2 tsp salt&lt;br /&gt;&lt;span style="display: none;" class="nocoupons"&gt;nocoupons&lt;/span&gt;3/4 tsp freshly ground black pepper&lt;br /&gt;1 cup freshly grated parmesan&lt;br /&gt;1 cup packed basil leaves&lt;br /&gt; &lt;p&gt; Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. So I looked what was on my shelves and decided to make simple Chicken Tetrazini.&lt;br /&gt;&lt;br /&gt;Simple Chicken Tetrazini&lt;br /&gt;1 lb chicken tenders&lt;br /&gt;8 oz. spaghetti noodles&lt;br /&gt;2 cans cream of chicken soup&lt;br /&gt;3/4 cup mayonnaise&lt;br /&gt;1 cup shredded cheddar cheese&lt;br /&gt;3 Green onion stalks&lt;br /&gt;curry powder&lt;br /&gt;salt and pepper&lt;br /&gt;&lt;br /&gt;1. Cook spaghetti noodles as directed.  Cook chicken tenders in a skillet until golden brown.  Add salt and pepper to taste.  Shred chicken into bite size pieces.&lt;br /&gt;2.  Chop green onions.  In medium size bowl add cream of chicken soup, mayonnaise, cheese, onions, and curry to taste. (I added a little extra cheese because I like it)&lt;br /&gt;3.  Combine noodles, chicken, and sauce mixture in a glass baking pan.  Cook in oven at 350 for 20 minutes, or until hot. This is another recipe from my sister Julie, and I have heard good things.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Fried Ice Cream&lt;/span&gt;&lt;br /&gt;3 cups rice Krispies&lt;br /&gt;1 1/2 cups brown sugar&lt;br /&gt;1 1/2 cups chopped nuts&lt;br /&gt;1 1/2 cubes of butter&lt;br /&gt;1 1/2 cup coconuts&lt;br /&gt;2 quarts vanilla ice cream, softened (using WF makes it easy to cut and lay out)&lt;br /&gt;&lt;br /&gt;Melt butter and brown sugar together on stovetop.  Add additional ingredients (except ice cream), mix well.  Layer 1/2 mixture on bottom of a cake pan, layer ice cream, and sprinkle rest of mixture on top.  Press firmly.  Freeze.  Spoon topping over. Mix like bread or rolls.  Let rise 5 min., punch down, and do this about 3 more times.  Then let rise about ½ hour.  Roll out until ¾  inch thick.  Cut in about 1 inch&lt;br /&gt;2. strips and tie in knots.  Let rise about 45 min. and bake at 350 for about 20 or until light golden brown.  I always make cream cheese frosting (8 oz. cream cheese, 1 cube butter, 2 tsp vanilla and about 3-4 cups powdered sugar) mixed with about 2 tsp. orange extract for the frosting. I found this on foodnetwork.com.  Believe it or not it's the first potato salad I have ever made.  I added more green onions then it call for, but I am an onion fan.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Texas Country Potato Salad&lt;/span&gt;&lt;br /&gt;4 strip bacon&lt;br /&gt;1 pound red potato (unpeeled)&lt;br /&gt;1 green onion sliced&lt;br /&gt;1 boiled egg chopped&lt;br /&gt;1/4 cup mayonnaise&lt;br /&gt;1 teaspoon Dijon mustard&lt;br /&gt;salt and pepper&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;1.  Cook bacon until crispy. Drain, reserving a few tablespoons of the grease, and crumble. Set aside.&lt;br /&gt;2.  Place the potatoes in a large saucepan. Cover with cold water. Add a tablespoon of the bacon grease and some salt and place over medium-high heat. Bring to a boil and cook until the potatoes are tender, about 15 to 20 minutes. Drain and let the potatoes cool and then cut into bite-size pieces.&lt;br /&gt;3.  In a separate bowl, mix mayonnaise, Dijon mustard, salt, and pepper for dressing.&lt;br /&gt;4.  Toss potatoes, onion, and egg in dressing. Add bacon. It's the perfect summer dessert!  Of course I forgot a picture, but it turns out almost like a custard or moose.  YUM!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Raspberry Lemonade Cake&lt;/span&gt;&lt;br /&gt;1 pint whipping cream&lt;br /&gt;Sugar&lt;br /&gt;1 can Eagles sweet and condensed milk&lt;br /&gt;1 can frozen Raspberry Lemonade (or strawberry)&lt;br /&gt;1 Round Angel Food Cake&lt;br /&gt;&lt;br /&gt;1. Defrost Raspberry Lemonade&lt;br /&gt;2. Cut cake into 1 inch squares and put in a large bowl&lt;br /&gt;3. In another bowl beat whipping cream until it sets, add sugar to sweeten to your taste&lt;br /&gt;4. Add sweet and condensed milk and defrosted lemonade to whipping cream.&lt;br /&gt;5. Fold cream mixture into cake bowl.  Do not over stir, just coke each piece of cake with the cream.  Put the entire thing into a cake pan and place it in the freezer. In a large bowl dissolve yeast in 1/2 cup warm water.  Add remaining water, dry milk, oil, sugar, salt, and 3 cups flour.  Beat until smooth.  Stir enough remaining flour to form a soft dough.&lt;br /&gt;2. Knead dough about 6-8 minutes.  Put in greased bowl and cover with damp towel.  Let raise in a warm place until doubled in size.  About 1 hour.&lt;br /&gt;3. Punch dough down and break in half.  Place in 2 greased pans.  Cover with damp towel and let rise until doubled in size.&lt;br /&gt;4. Bake at 375 for 35 min.  Remove bread from pans and allow to cool. Mix ground pork, cabbage, onion, and garlic in a large bowl.&lt;br /&gt;2. Spoon small amounts of mix onto shells and fold over.  Use water on edges to help seal the shell.&lt;br /&gt;3. Heat a frying pan on the stove.  Put in 1 tablespoon vegetable oil and gyozas (fill the pan, the amount will very on how big your pan is).  Cook until golden brown and crisp.  Keep doing until all gyozas are cooked. It was really good, different, but really good. This is one of her recipes and it was delicious!  It's easy and only took 20 minutes.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Honey Mustard and Red Onion Barbecued Chicken&lt;/span&gt;&lt;br /&gt;2 tablespoons vegetable oil&lt;br /&gt;1/2 red onion, chopped&lt;br /&gt;1/4 cup apple cider vinegar&lt;br /&gt;1/4 cup brown sugar&lt;br /&gt;1 cup chicken stock&lt;br /&gt;1/2 cup honey mustard&lt;br /&gt;1/2 teaspoon allspice, eyeball it&lt;br /&gt;1/2 teaspoon curry powder, eyeball it&lt;br /&gt;4 boneless, skinless chicken breasts&lt;br /&gt;4 boneless, skinless chicken thighs&lt;br /&gt;Vegetable oil for drizzling&lt;br /&gt;Salt and freshly ground pepper&lt;br /&gt;&lt;p&gt; 1. Preheat grill pan or griddle over medium high heat.  &lt;/p&gt;&lt;p&gt;2. Pour 2 tablespoons vegetable oil into a small saucepan over moderate heat. Add red onions and saute 3 to 5 minutes. Add vinegar and reduce by half, 1 to 2 minutes. Add brown sugar and cook 1 minute to incorporate. Whisk in broth and honey mustard, allspice and curry. Bring sauce to a bubble and reduce heat to lowest setting. &lt;/p&gt;&lt;p&gt;3. Coat chicken with a drizzle of oil and salt and pepper, to your taste. Place chicken on hot grill and cook 4 or 5 minutes, then turn. Baste chicken liberally with sauce and cook another 5 minutes. Turn once again and baste. No secrets I just used a box rice, but it was yummy!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;Petite Sirloin and Red Pepper Kabobs&lt;/span&gt;&lt;br /&gt;3 Petite Sirloin Steaks&lt;br /&gt;1 Red Bell Pepper&lt;br /&gt;1 cup A1 Sauce&lt;br /&gt;&lt;br /&gt;Cut steak into 1 inch squares.  Put steak and A1 in zip lock bag and marinade for 30 minutes.  Cut Red Bell Pepper into 1 inch pieces.  Place steak and red peppers on skewer and grill on medium heat. Stir together the yogurt, lemon juice, olive oil, coriander, garlic, cumin, 1/4 teaspoon salt, and pepper to taste in a small bowl.  Pour half of the sauce into a large resealable plastic bag; cover and refrigerate the remaining sauce.  Add the salmon to the bag and turn to coat with the marinade.  Refrigerate for 20-30 minutes, turning the bag over once.&lt;br /&gt;2. Preheat a grill to medium-high.  Remove the salmon from the marinade and blot off excess yogurt with paper towels.  Lightly oil the grill and add the salmon; cook, turning once, until browned on the outside and opaque in the center, 4-6 minutes per side, depending on the thickness. Parcook the potatoes: place in a pot of water and boil until fork-tender; let cook.  Slice each potato lengthwise into eighths.&lt;br /&gt;2. Preheat a grill to medium or place a cast-iron grill pan over medium heat.  Mix 1 tablespoon salt, the lime zest, and cayenne in a small bowl.&lt;br /&gt;3. Brush the potato wedges with the oil and season with salt and pepper.  Grill until golden brown on all sides and just cooked through, about 1 1/2 minutes per side. My friend Carrian has inspired me to do it.  I decided that the reason I don't like eating at home is simply I haven't tried cooking enough of a variety.
